*Ingredients
°Vanilla Waffle Cookies °11oz
°1 1/2 cup of sugar divided
°4 tablespoons melted butter
°16 oz softened cream cheese
°16 ounces heavy cream
°1 box 3. 3 oz orange gelatin
°1 cup of boiling water
°Zest of 1 orange
°1/4 teaspoon of vanilla extract
°1/2 cup powdered sugar
*Instructions
Putting vanilla wafers in a food processor and pulse until finely chopped.
Add 3/4 c of sugar and melted butter also pulse to incorporate.
Greased bottom also sides of 9″ springform pan.
Press the mixture into the bottom and lightly up the sides of the pan.
Placing in freezer for 31 min.
Beat cream cheese and rest sugar to smooth.
In a medium bowl, combine gelatin and boiling water. Whisk until dissolved.
Put aside.
Zest the orange and set aside.
Whipped cream, powdered sugar and vanilla form stiff peaks.
Add 1/2 of the whipped cream mixture to the cooled gelatin and add the orange zest.
Whisk to mix. Put aside.
Fold remaining whipped cream mixture into cream cheese mixture.
Spread half of the cream cheese mixture over the crust.
Pour 2 cups of the orange whipped cream mixture over the cream cheese mixture.
Spread remaining cream cheese mixture over orange mixture.
Pour remaining orange whipped cream mixture over cream cheese mixture.
If desired, take a butter knife and gently slide through the layers of cream cheese to swirl.
Refrigerate for at least 6 hours.
