*Ingredients:
°3 cups potatoes, peeled and cubed, boiled until soft but not mushy.
°1 pound smoked sausage, thinly sliced, boiled until soft but not so tender
°4 tablespoons butter
°4 tsp of flour
°2 & a half cups or milk
°Salt & pepper to taste
° ½ pound of Velveta cheese, cut into cubes
°1/2 cup shredded cheddar cheese
°1/4 teaspoon smoked paprika

In skillet over medium-low heat, seasoning hot dogs with 1 to 2 tsp olive oil, stirring, to slightly browned.
Spray a 9×13 baking dish with nonstick cooking spray. Transfering cooked potatoes also sausage to baking dish, stir, to evenly distributed.
Raise heat to and adding butter to the skillet. & it melts, whisk it to flour. Let it cook for a minute, whisking constantly to remove the taste of flour. Slowly adding half and half, 1/4-1/2 c at a time, whisk constantly until combined. Continue cook to it thick.
Adding velveta, paprika, salt, & pepper, stirring until totally dissolved and sauce is smooth.
Pour cheese sauce evenly on potatoes and meat. Sprinkling grated cheese equally on top.
Bake at 350 degrees for 35-45 minutes, or until potatoes are cooked through and casserole is golden on top.
