*Ingredients
°2 c pre-cooked roast chicken
°8 oz cream cheese
°1/2 c sour cream
°1 tablespoon finely chopped onion
°1/2 teaspoon chilli powder
°1/2 teaspoon cumin
°1 1/2 cup grated cheddar cheese
°4 ounces of green chilies
°10 tortillas
°20 oz red or enchilada sauce
*Instructions
Preheat oven 350 degrees.
Bone chicken and shred chicken to pieces, if you don't have roast chicken you can use 3-4 cook chicken breasts.
In skillet, blend chicken, cream cheese cubes, sour cream, chiles, chop onion, seasonings and 3/4 c cheddar cheese. Heat to the cheeses are totaly melted.
Spraying baking dish with cook spray. Spoon a tsp of chicken mixture over the tortilla, roll it up & placing it in pan, seam side down.
Repeat to all the fill is used. Pour enchilada sauce on rolled tortillas.Sprinkling rest cheese on enchiladas & bake at 350 un-covered for 20-25 min.
